Consumers open to tasting precision-fermented foods but seek clearer answers, EIT Food research finds

Consumers remain curious about foods produced through precision fermentation, yet widespread understanding is still limited, according to new qualitative research published by EIT Food Consumer Observatory. Released in the run-up to World Food Day on 16 October, the report finds a readiness among many people to try such products, provided companies can respond to basic questions about how items are made and what consumers should expect.

The study highlights that curiosity alone will not guarantee acceptance. Participants wanted plain-language explanations of the production process, assurances on safety and quality, and a first tasting that met sensory expectations. Those findings point to a communication and product-development challenge for firms working in precision fermentation and related food innovation: the initial encounter with a product often shapes longer-term trust and purchase intent.

For manufacturers and retailers, the research suggests practical priorities. Clear labeling, accessible educational material and an emphasis on the eating experience are among the areas that could influence consumer choices. The report also signals potential roles for public bodies and independent institutions to support consumer confidence by providing verified information and oversight as novel production methods enter mainstream markets.

Published by a prominent industry observatory ahead of a global day focused on food systems, the research frames an opening for companies that can combine transparency with a strong sensory performance. The EIT Food findings underscore that converting curiosity into sustained market uptake will depend on addressing information gaps and delivering convincing product trials at the moment consumers first taste these new foods.
